Awesome (and EASY!) Thai Coconut Soup

Seriously yall-
last night I made the easiest, cheapest, most awesome soup ever.


It's no secret that I love to cook and I seldom steer away from recipes due to complicated steps or long lists of ingredients. Doesn't really faze me, I enjoy it.

But I'll admit that as much as I love Thai Coconut soup out at restaurants, whenever I'd look at recipes to make my own I'd think "Riiiiiiight. Like I'm going to find lemon grass and kaffir lime leaves in this town" and I'd quickly dismiss the idea. 

Until I saw this recipe. This was sooooooo easy. And soooooo good. 


Like if it was just pretty good, I'd still say it's a win because well,
it's cheap and easy.
But the fact that it's cheap and easy
(this is Jake's cue to make a your mom joke)
AND amazing makes it an incredible addition to the recipe box.
(or in my case, the pepperplate app. love that thing!) 


I added mushrooms, lime juice and cilantro and decided to forgo the diced chicken in the soup and instead, fixed a little side of


It was pouring rain so grilling was out,
chicken was still good on the George Foreman
(would have been better with a little grill flavor),
and the dipping sauce was FANTASTIC!
