Good Eats: Baked chicken tenders

I've never gotten all that excited over chicken.
Don't get me wrong, I didn't dislike it, but unless it's coming in a Chick-Fil-a foil wrapped sandwich, I've just never looked forward to chicken night like I would say, burger or fish taco night. A lot of this is due to the fact that Anthony and I openly admit to always over cooking chicken. We eat rare steaks and practically still swimming ahi tuna but for some reason, the thought of not cooking that chicken quite enough has always made us err on the side of dry and overdone.

That's changing. With our new efforts to change up our menus and be more consciencious about what we're eating (and good old Pinterest of course), we've had some great chicken meals lately (and practice is paying off, we cook it perfectly now!) and I find myself craving chicken now.

These oven baked chicken tenders were fantastic.

So crispy that I would gladly eat these over fried tenders anytime.
The key was the toasting of the panko, which Anthony handled expertly : )
